SANDRA: Cosa vuol dire mangiare per te?

PAOLA: (tsk)… Mangiare-e-e...mmm… per me-e-e il giusto-o-o binomio tra-a-a …mmm … il piacere di mangiare e quindi di gustare un buon pasto e-e-e la condivisione-e-e …  con aaah … il ritrovarsi con i propri cari-i-i … amici, parenti!

SANDRA: Quindi-i-i … il pasto...  come  momento... per rinsaldare i legami?

PAOLA: Esatto! Anche perché-é-è mangiare è-è-è come un r-r-rito che-e-è conferma-a-a l’appartenenza a un gruppo, a una famiglia, a uuu…una tribù!!

SANDRA: Allora per te… no fast food?

PAOLA: (hhh) No-o-o... fast food SI’, però-ò-ò inteso all’italiana è più-ù-ù uno slow food nella preparazione eeh…aaa comunque fast food nella consumazione del pasto. Infatti noi italiani ci caratterizziamo proprio dai TEMPI di preparazione-e-e dei cibi … in quanto-o-o è proprio in quel momento chee ci mettiamo la paS-S-io-o-o-ne… la-a-a … il desiderio di-i-i, di cucinare-e-e un buon pasto … e condividerlo.

SANDRA: Quali sono i piatti tipici che ami e che non siano, naturalmente, pasta e pizza?

PAOLA: Beh, escludendo a priori questi-i-i piatti tipici italiani-i-i, eee  una buona caprese, una parmigiana, la polenta, (hhh) eee mmm venendo qui a R-R-Roma ho avuto anche modo d-i-i-i di gustare  piatti tipici come i saltimbocca alla romana, la trippa alla romana, (hhh) aaa la coda aaa... ... alla vaccinara eee zucchine alla scapece, carciofi…

SANDRA: Vai spesso in ristoranti etnici come per esempio ristoranti cinesi, indiani, pachistani o africani?

PAOLA: Premesso che, eeeh, in Italia-a-a i ristoranti etnici sono in numero nettamente infir-inferiore rispetto alla presenza di questi ristoranti nei capoluoghi, eeeh, dei paesi esteri, eeeh questo eeeh perché, noi italiani siamo un popolo conservatore e quindi eeeh mmm che ama-a-a eeeh i propri prodotti, basti pensare eeeh infatti che eeeh la Starbucks ha rinunciato a inserirsi e a inserire le proprie catene (hhh) in Italia perché l’Italia è proprio l’unico paese che non apprezza né il suo caffè né i-i i pasti pronti. Eeeh mmm inoltre, da bravi conservatori, noi ogni volta che dobbiamo viaggiare (hhh) abbiamo la tendenza e l’abitudine a riempire il baule della macchina dei nostri prodotti, olio, (hhh) eeeh pomodor-o-o, e-e-e tutto quanto c'- è possibile trovare anche nei supermercati eeeh esteri,  cioè nei supermercati dei paesi  (hhh) eeeh stranieri ma-a-a c’è la convinzione che i propri prodotti siano migliori.
(hhh) E-e-e mmm anche, questo è anche il risultato de-l-l-l aaah fatto che l’Italia è-è-m-m è al primo posto (hhh) nella lotta-a-a contro-o-o gli OGM quindi (hhh) eeeh gli alimenti geneticamente modificati.

SANDRA: What does “eating” mean for you?

PAOLA: Well…eating..for me-e-e is the right combination between..um..  the pleasure of having a meal... and thus tasting something good…a-a-and the sharing…with erm…the pleasure of being once again with people you love…  friends, relatives!

SANDRA: So-o…meals…as a means of consolidating personal bonds?

PAOLA: Exactly! Also because eating i-i-is like a ritual that confirms that you belong to a group, a family, ..a... a tribe!!

SANDRA: So…for you…no fast food places?

PAOLA: No-o-o... fast food is fine, but in the Italian sense, which means slow food with respect to the preparation time and…um-m…fast food with respect to the eating time.  In fact, what characterizes us Italians is just that: the TIME spent cooking our food.. because-e-e that's the moment in which we really express out paSSion…our.. desire…to cook a delicious meal…and share it!

SANDRA: What are the local dishes that you love eating the most, besides pasta and pizza, of course?

PAOLA: Well, excluding a priori these typically Italian dishes, erm... a good caprese salad, an eggplant parmesan, a chickpea polenta (hhh) erm since coming to Rome, I've had the chance to-o-o taste local dishes like Roman-style veal cutlets and tripe,  (hhh) erm  oxtail erm stew, a-a-and mint zucchini, artichokes…. 

SANDRA: Do you often go to ethnic restaurants, for instance Chinese, Indian, Pakistani or African restaurants?

PAOLA: Let me say first that, erm, in Italy there are substantially fewer ethnic restaurants than in the capitals of other countries, . This is because we are conservative and erm so we are attached our own products; just think, erm,  Starbucks erm has given up opening its chain of cafés in Italy because Italy is the only country that doesn’t appreciate chain-store coffee and ready-made meals.  Erm hmm besides, being the conservatives we are, every time we take a car trip abroad (hhh) we have the tendency, the habit of filling the trunk of the car with our own products, like olive oil, (hhh) a-a-and peeled tomatoes…a-a-and…all stuff that we c- that it's possible to find in a foreign supermarket, I mean in the supermarkets of the foreign erm countries we visit . But there's the idea that our food is the best! Um-m-m this is another reason why Italy erm is one of the leading countries against the GMOs, the (hhh) Genetically Modified food products.
